With his unique blend of creativity, passion for food and contagious leadership, I am confident that Chef Cordell will enhance our Club’s culinary offerings and elevate the dining experience for our members and guests.

A graduate of Le Cordon Bleu College of Culinary Arts in Austin, Texas, with post-graduate experience in Paris, France, Chef Cordell brings impressive culinary expertise to City Club. Chef Cordell’s wide range of experience includes working at Austin’s Ventana restaurant, serving as Sous Chef for Chef John Folse & Company and Jubans, partnering with Dooky Chase on special events, serving as Executive Chef for Marriott Baton Rouge, and more.

Chef Cordell brings vast experience in creative, upscale catering that will greatly enhance club events, private events, and weddings. For member dining, look forward to Chef Cordell’s fresh perspective on fine dining, featuring Louisiana-inspired plates using local ingredients along with new dishes showcasing global flavors – all while still offering your club favorites.

A Message from our Board of Governors

Fellow Members:

As I write to you, I hope that you are all enjoying a great summer and finding ways to beat the heat.  I wanted to take a moment to give a mid-year update on where we stand as a Club.

From an activity standpoint, the Club is seeing tremendous use by Members both from a traditional, à la carte (breakfast, lunch, dinner and bar) perspective and from the perspective of private events as well.  It is not uncommon to have an evening with a Wedding or Rehearsal Dinner occurring upstairs while a the Grill and Bar are full of members downstairs.  

Our wonderful staff has handled this increase in activity with their usual poise and grace.  We are pleased to have welcomed several new members to the team and they are melding into the culture of the City Club quite nicely.  It should be noted that we have made adjustments to hourly and salary wage rates so as to be competitive in the increasingly challenging marketplace for talent and so as to retain and build our staff.

Behind the scenes, we have made investments in the form of a new broiler, new friers, new coolers, a smoker, replacement of pots and pans, and new banquet tables.  Many of these items had been the subject of deferred maintenance, particularly during the pandemic period when economic prospects were so uncertain. 

From an infrastructure standpoint, many of you will have noticed, through the presence of now-removed scaffolding, that we conducted and completed the 2nd phase of our two-part roof and masonry project around the Club.  This badly needed project should end the water intrusion we were seeing at the Club.  This project, broken into two phases so as to control the disbursement of finite Club funds, should eliminate and prevent this problem well into the future.  We can now make the minor cosmetic fixes to plaster and paint, etc. that were rendered in need of repair by the aforementioned water intrusion.

On the member-facing front, Zafer and his team have worked diligently to make strategic investments to upgrade our service offerings and to improve the member experience at the Club.  Many of you will have noticed our new stemware, glassware, china and serving trays or our new wood banquet-service bar and accompanying bar top tables.  At the same time, Josh has led the overhaul and expansion of the wine list (both by-the-bottle and by-the-glass).  We have made great strides with our bar program thanks, in large part, to the addition of our immediately popular mixologist, Ken Milo.  Chef Jaime has been busily making creative additions and changes in the kitchen via his menu expansion, enhanced food offerings, increased use of farm-fresh products and through the introduction of his very popular multi-course chef’s choice tasting menus on Saturday nights.  We are even considering an experiment to expand our hours of operation regarding Friday evening dinner service…stay tuned on that front.

While many of the improvements listed above have driven excitement and enhanced activity at the Club, they obviously do not come without a cost.  Financially, we are seeing significant year-on-year top line revenue increases driven by the uptick in activity and Club usage.  Despite the marked increase in revenue, we are seeing margin erosion occur due to increased operating costs, stemming from rising input costs but particularly evident in rising labor costs.  As is true everywhere in 2022, costs are rising at a dramatic rate and the City Club is no exception. 

Faced with this situation, we could make the decision to do things like cut back on quality, reduce food portion sizes, and cut staffing levels.  Given our goal, however, of providing the best fine dining experience in town along with top-flight service, we don’t think that heading in the direction of cutting corners makes sense at this point.  To be sure, you can expect and demand that management will be watching expenditures closely, releasing any idle staff early on slow-nights, etc. and doing all of the things that running a tight-ship requires.  However, we don’t think it makes sense at this point to try to cut our way to prosperity given the type of high-quality experience that our membership seek and deserve.

We had hoped to avoid any type of dues increase in fiscal 2022 given the economic roller coaster that many of our members faced during the pandemic.  Unfortunately, at this point, we no longer think that avoiding a dues increase in 2022 is advisable.  We have held dues constant, with no increases, since the beginning of 2020, before the pandemic began.   In early September, when you receive your August statement, you will notice a very modest $10.00 per month dues increase.  We hope that you will find that this slight increase in expense is more than justified by the experience that your membership provides.  You can expect that, in early 2023, we will return to the practice of moderate annual dues increases to keep pace with what we hope to be a more normal inflationary environment.

Fellow Members:

“Z” Zafer Goncu, General Manager

On behalf of the Board of Governors, I’m extremely pleased to announce that Zafer Goncu ,“Z”, has been formally appointed General Manager of the City Club at the Board’s most recent meeting.

After serving as Interim General Manager since late August of last year, Z has done a tremendous job in guiding the Club’s trajectory as we have sought to get back to doing the things the Club does best while the world shifted from pandemic to endemic. Along the way, Zafer oversaw a very successful and quite busy end of the year capped by strong December financial performance as our private events business really rebounded with the return of holiday parties and the like.

Since the beginning of this year, Z has focused on fine tuning the operation, working with new Exec. Assistant General Manager Josh Gary, Chef Jaime and the rest of the team to drive improvements and additions to our food and beverage offerings as well as to make refinements to the service with which those items are delivered. Having started his tenure at the City Club in 2007 as a server, Zafer understands every element of Club operations from the ground up. He is fully committed to the goal of cementing the Club’s standing as the premier fine dining venue in Baton Rouge.

We are appreciative of Zafer’s many contributions and look forward to what is yet to come. Please join me in congratulating Z and in wishing him the best in his new role.

A Message from our Outgoing Board Chair, Helena Cunningham

City Club members:

Reflecting on the past two years reminds me of a great quote I recently heard: “There are years that ask, and years that answer.” The year 2020 certainly asked a lot of all of us, given the shutdowns, mandates, impacts, and uncertainties of the pandemic. In 2021, as we adapted our personal and professional lives to protect our health, to support our economy, and to continue thriving in spite of the challenges, I believe many felt that we found more answers.

As I end my tenure as the 2021 President of the Board of Governors, I cannot express enough gratitude to all my fellow Board members and to our entire membership and staff for the trust placed in me during such a critical time, and for the answers you all helped to provide throughout this formidable year.

I am proud to report that thanks to the leadership and efforts of so many, our City Club not only successfully navigated the shutdowns and business disruptions brought on by the pandemic, but more importantly our collective efforts have elevated the City Club to a sound financial position with key leadership in place to see the club thrive going forward.

I am confident in this because on so many levels during these trying times, we led.

We led as our club withstood several key personnel changes this year, including the retirement of two of our key team members, Mr. Anthony Warr and Darren Betts. We wish them well as they enter this new chapter of their lives. We have gained our top-notch chef, Jaime Hernandez, who is familiar with our operations and the quality we provide to City Club members. And we have our tremendous Interim General Manager, Zafer Goncu, who is leading our operations every day.

Most important on the personnel front, we retained so many of our great team members throughout the uncertainty of the pandemic, and we celebrate them for their perseverance and loyalty to the club and our members.

We also led in making challenging but responsible financial decisions. Despite the shutdown, we pulled together to make critical budget decisions to withstand this disruption. Since then, we have put the City Club in a solid financial position that exceeded our estimates, and we are now ending the year with higher than anticipated revenues.

We also took advantage of the crisis to plan for the future, making critical capital improvements to the facility. Embarking on these facility enhancements was a key step toward the long-term viability of the club, and I am so excited that we have many more improvements planned for the coming year.

I must give a special thank you to the entire City Club staff – we are blessed to have such a wonderful team, and I am so grateful to have worked alongside each of you to accomplish our goals despite the most challenging circumstances. Thank you for all you do to make the City Club a success.

I also want to recognize my fellow members of the Board of Governors for the dedicated time, energy, and insight they poured into seeing the City Club through these unprecedented times.

Finally, I want to give a warm welcome to incoming Board President Chip McAlpin and recognize his tireless efforts this past year both as Board Vice President and as Chair of the Search Committee for the General Manager position. Chip’s talent and commitment will continue serving the City Club and our members very well, and I ask you to join me in wishing him the very best for his tenure in 2022.

Again, thank you for the opportunity to serve in this role. Together we not only weathered the storm, we pursued opportunities to position the club for even greater success in the future. It has been a sincere pleasure to be a part of it all.

My Fellow Members

As I write this, I am both optimistic and excited as we move out of the mandated pandemic related restrictions. Our club is emerging from Phase II into the Phase III operational phase of COVID-19 which better allows us more latitude in occupancy and capability. This enables us to return to a near normal mode that will address the pent-up demand of our membership and allow us to commence hosting the many highly regarded social and business events for which the club is so well known.

Your board of governors and I are extremely proud and grateful for the support that you, the membership, have shown our club throughout this unprecedented event. Your continuation of your memberships and dues has financially sustained the club and more importantly, allowed us to compensate our many long-term employees. Clubs were not included in the federal PPP assistance program and without your support these employees would have endured financial hardship.

Despite the unwelcome onset of this pandemic, our club has accomplished some very notable achievements. We are financially stable and have a strong cash position. At the beginning of the year we hired a new general manager, David Coughlin, who greatly assisted the club through the recent challenges. This was shortly followed by the return of Zafer Goncu, better known as “Z”, the catering manager. More recently we were able to engage the services of a premier chef, Chef Christian Rossit. These personnel actions signal positive progression for future club operations.

We have also utilized this time to initiate some major needed capital improvements for the betterment of the club. The most significant of these is the re-engineering of the club’s roof, which is in the final phase. Additionally, the revamping of the Veranda Bar area is another improvement underway. Behind the scenes the club’s mechanical infrastructure is being addressed with special emphasis on our air conditioning systems. During the complete shutdown we were able to address many other aesthetic and cosmetic needs that enhance the club’s ambiance.

In conclusion, I want to again express my gratitude to the membership. I also want to thank my fellow board members for their counsel and support. Lastly, we all owe a huge thank you to the management and staff of our club who were able to efficiently and effectively guide our club through these trying times. We look forward to your safe return to our beloved club.

Mr. Faulk noted that “Eleven staff members were honored for their service and collectively totaling 200 years. In addition, sixteen members were honored who for more than 50+ years of membership totaled to more than 850 collective years with the City Club of Baton Rouge.

The City Club of Baton Rouge has enriched the lives of community leaders, business professionals, and families for over 60 years. In 2013, the Club completed an extensive interior and exterior renovation as well as a 2,000-square foot addition featuring a banquet-style kitchen, a garden room, and an outdoor patio overlooking downtown Baton Rouge. CITY CLUB RENOVATION IS COMPLETE!
 

Remodeling completed on Entry, Foyer and Sitting Room

We are delighted to announce that the City Club renovation project has been completed. On Monday, July 10th, City Club of Baton Rouge began the renovation project that was scheduled to be completed in late October 2017. This project marks the beginning of a very exciting time for our members and the downtown community as we prepare the City Club for the next generation of membership.
